Costa Vida Brings Fresh Baja Flavors & Breakfast Tacos

Costa Vida Fresh Mexican Grill, located at Caprock Crossing, has been bringing the fresh coastal flavors of the Baja Peninsula and Mexico to South College Station since they opened their doors in July. Confident that this unique and well-established fast-casual restaurant which can be found in cities all across America would take off, local husband and wife team, Nick and Holly Johnston (both Aggies, Class of ’02 and ‘99), chose Costa Vida for its fresh and fun coastal flavors.


With fresh, whole ingredients and affordable scratch-made fare prepared daily, it’s no surprise Costa Vida is quickly becoming a family favorite! The scintillating flavors and scrumptious offerings are endless. Must-trys include their popular Shrimp Tacos with zesty mango salsa, Steak Quesadillas with hand-trimmed beef and Raspberry Chipotle Chicken Salad, not to mention an array of gluten-friendly and vegetarian options. Make sure to grab a yummy housemade agua fresca or Tres Leches cake to go with.


“It’s fresh food fast,” explained owner and operator, Holly Johnston. “You leave refreshed and satisfied. We like to say we offer a quick escape to the coast with bright, vibrant flavors.” Light and airy homemade flour and corn tortillas are cooked right before your eyes on a traditional comal and a velvety queso made with their signature salsa fresca and roasted green chile sauce is a to-die-for starter.


In January, Costa Vida will be launching a new breakfast taco program and coffee service with options such as the Machaca Taco, made with succulent slow-cooked and hand-pulled shredded beef, sautéed onions, jalapenos and scrambled eggs. “It’s fantastic!” said Holly. “Of course, we’ll also have the standards most people are looking for, such as bacon, egg and potato. We’ll also be serving a horchata coffee as well. This is a collaboration between myself and the corporate support center, and we’re just really excited that we get to pilot the program and see if it’s something the whole company can adopt.”


The College Station restaurant will be the very first location in the Costa Vida brand to launch the program, something that has been a vision of Holly’s from the beginning. We all know Texans love their tacos, so there is little doubt this new program will also be a great success.
